DANIELLE’S HEALTHY(ER) CHINESE CHICKEN SALAD


We couldn’t find the perfect healthy Chinese chicken salad so we took matters in to our own hands and made our own. Quick, easy, and healthy lunch option that you can make ahead and have ready to go all week. Not to brag, but we nailed it! Make it for yourself and see.
Ingredients:
  • 1 bag chopped romaine
  • 1 bag chopper butter leaf lettuce
  • 1 bag shredded carrots
  • Pre-made grilled chicken
  • Slivered almonds
  • Sesame sticks
Dressing:
  • ¼ cup Olive oil
  • 1 Tbsp. Honey
  • 2 Tbsp. Rice wine vinegar
  • 1 Tbsp. Grated ginger
  • 1 Tbsp. Soy sauce
  • 1 Clove minced garlic
  • 2 Tsp. Sriracha
  • 1 Tsp. Sesame oil
  • Pepper to taste
Directions: Make dressing ahead of time by whisking together all ingredients and store in the fridge.  In a large bowl add about a ¼ bag of romaine, a ¼ bag of butter lettuce, handful of carrots, chicken, and sprinkle with almonds and sesame sticks (our favorite part but omit for a healthier option). Toss with desired amount of dressing and enjoy! Warning: you’re going to be hooked!
