TWO INGREDIENT BANANA AND OAT COOKIES

Two ingredient banana and oat cookies. I had a few bananas in the fridge that had gone a little brown; I feel like I’ve done banana bread to death recently so I wanted to make something a little different. I remember seeing Tiffany Watsons Instagram story the other night where she made banana and oat cookies.
These cookies are so quick, simple and easy to make! No sugar, no flour and no eggs! Just bananas, oats and chocolate chips if you want to add them.

Preheat your oven to 170 degrees, in a large bowl mash bananas to a paste consistency. I used four small-medium bananas and just added in the oats as I went. I used instant porridge oats that we had in the cupboard. Keep adding oats until there are more oats than banana and it starts to come together.
I wanted to add some chocolate to the mix, so I poured in half a bag of dark chocolate chips. Fold over the chocolate chips evenly into the mixture and let sit for five minutes or so.

Line a baking tray with foil or greaseproof paper and spray it a few times with Fry Lite to make sure the cookies don’t stick. Using a tablespoon scoop the mixture on to the tray and slightly flatten the cookies with the back of the spoon. These cookies will not rise or spread like usual cookies so you don’t have to worry too much about spreading them out.

Place the cookies in the oven for around 15-20 minutes. I used a lot of bananas, so they were still a little soft at the 15-minute mark but it’s all down to how you like your cookies. I like mine ‘soft’ so I could have taken them out then. My boyfriend prefers them a little crunchier on the outside and softer in the middle so I left them to bake for 20 minutes.

Once baked, take the cookies out and leave them to cool for around 5-10 minutes. I was so impressed with them, I loved the soft cake-like texture in the middle mixed with the melted gooey chocolate chips. Quick, simple and easy to make, the bananas didn’t end up going to waste or ending up in the bin and they are healthier than my usual go-to cookie recipe!

You could add whatever you like to these cookies really if chocolate chips aren’t your thing try adding nuts, banana chips, raisins etc! Let me know if you give them a try!
