Chewy coconut cookies
Ingredients

- 150g plain flour
- 1/2 teaspoon bicarbonate of soda
- 1/4 teaspoon salt
- 110g butter
- 110g soft brown sugar
- 100g caster sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 100g desiccated coconut
Method

- Preheat oven to 180 C / Gas 4. Combine the flour, bicarb and salt; set aside.
- In a medium bowl, cream the butter, brown sugar and caster sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased baking tray. Cookies should be about 7cm apart.
- Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.
