Orange cranachan

Orange cranachan

Orange cranachan

PREP: 15 MINS      EASY   SERVES 4 COOK: 5 MINS
This seasonal pud makes a delicious yet light ending to a hearty meal

Ingredients

  • 4 blush or blood oranges
  • 50g pinhead oatmeal or rolled oats
  • 150ml pot whipping cream
  • 2 tbsp whisky
  • 150g tub Greek yogurt
  • 2 tbsp clear honey , plus an extra drizzle to serve, if you like

Method

  1. Slice the top and bottom off each orange and sit them on a board. Using a sharp knife, cut down between the peel and flesh until all the peel and pith have been removed. Cut between each membrane to remove all the segments. Roughly chop and set aside.
  2. Heat a non-stick frying pan over a medium heat. Dry-fry the oatmeal, stirring often, for 3-5 mins. It should start to smell nutty, but don’t let it burn. Tip the oatmeal onto a plate to cool.
  3. Whisk the cream and whisky together to soft peaks. Carefully fold in the yogurt, oatmeal and honey until just combined. Spoon half the mixture into 4 serving glasses and top with half the orange. Repeat layer with the remaining ingredients and serve drizzled with extra honey, if you like.

Happy Burns Night

Address to a Haggis

Fair fa' your honest, sonsie face,
Great Chieftain o’ the Puddin-race!
Painch, tripe, or thairm:
Aboon them a' ye tak your place,
Weel are ye wordy of a grace
As lang 's my arm.
The groaning trencher there ye fill,
Your hurdies like a distant hill,
Your pin wad help to mend a mill
In time o’ need,
While thro’ your pores the dews distil
Like amber bead.
His knife see Rustic-labour dight,
Trenching your gushing entrails bright,
An’ cut ye up wi’ ready slight,
Like onie ditch;
And then, O what a glorious sight,
Deil tak the hindmost, on they drive,
Warm-reekin, rich!
Then, horn for horn, they stretch an’ strive:
Till a' their weel-swall'd kytes belyve
Bethankit hums.
Are bent like drums;
Then auld Guidman, maist like to rive,
Is there that owre his French ragout,
Or olio that wad staw a sow,
Or fricassee wad mak her spew
Wi’ perfect sconner,
Looks down wi’ sneering, scornfu’ view
On sic a dinner?
As feckless as a wither'd rash,
Poor devil! see him owre his trash,
Thro’ bluidy flood or field to dash,
His spindle shank a guid whip-lash,
His nieve a nit;
But mark the Rustic, haggis-fed,
O how unfit!
The trembling earth resounds his tread,
Clap in his walie nieve a blade,
An’ legs, an’ arms, an’ heads will sned,
He'll make it whissle;
Like taps o' thrissle.
And dish them out their bill o’ fare,
Ye Pow'rs wha mak mankind your care,
Auld Scotland wants nae skinking ware
Gie her a Haggis!
That jaups in luggies;
But, if ye wish her gratefu’ prayer,
Robert Burns

Macaroni Cheese with Haggis

Macaroni Cheese with Haggis

VERY Burns Night, I try to come up with something different to do with haggis and this year is no different.
I’m giving you a fantastic recipe for macaroni cheese with haggis that you can enjoy tonight, or any time in the coming week.
But I’ve also gathered together some fantastic information that will give you everything you need to throw your own Burns Supper.
INGREDIENTS
Serves four (easily doubled or trebled)
■ 30g butter
■ 375g macaroni
■ 1 tsp English mustard
■ 1 tsp Dijon mustard
■ 45g plain flour
■ 500ml whole milk
■ 150g mature cheddar, grated
■ 100g gruyère cheese
■ 50g Parmesan, grated
■ 300g haggis cooked as
per packet
■ 50g stale bread such as ciabatta or focaccia
METHOD
Boil the pasta for 3 mins less than the packet instructions. Melt the butter in a saucepan. Add the garlic and mustards, cook for 1 min, then stir in the flour. Cook for 1 min more, then gradually whisk in the milk until you have a smooth sauce.
Simmer for 8 mins, whisking constantly until thickened.
Take off the heat, then stir in almost all of the cheddar, all the gruyere and two-thirds of the Parmesan. Stir the pasta and some salt and pepper into the cheese sauce, then mix in the haggis.
Tip into a large ovenproof dish. Scatter over the breadcrumbs and remaining Parmesan and cheddar, then bake at 180C for 25 mins until crisp and golden.
